Sushi paleo/low carb style

Sorry, it's just that as soon as I say sushi, I get fixated.  I know the idea of raw fish seems downright lunatic to some people (esp since we are so focused on cooking things to proper temperatures to kill the nasty goblins in our food), but safely obtained sushi fish is awesome.  Steak Tartare is awesome.

Sushi rolls, however, often have that rice stuff I have foresworn.  But cauliflower has been subbing in for rice like a champ in everything I make (and makes a mean pizza crust/breadsticks), so I thought perhaps that I could put it in sushi. Dare I dream? 

Cauliflower rose to the occasion yet again!  But then, when you put nori+salmon+sriracha+mayo+cucumber+avocado, you really can't go wrong.  Tom and I feasted, and I'd like to point out (again) that homemade sushi is delicious and relatively cheap.

How to make cauliflower for sushi:
1) Take a small head of cauliflower and rice it (I use the blender method: chop cauliflower into florets, put in blender, fill with water, blend until cauliflower is size of rice).
2) Saute in grapeseed oil, butter, or other neutral flavored fat until it's translucent and cooked.  Add 1 T rice wine vinegar and mix through.
3) Assemble your sushi station.  I use salmon, avocado, and cucumber.

5) Slice into 6 pieces, or eat it like a burrito.
