Essence of summer/cucumber tomato salad


Not long ago, I lived in Belgium.

Okay, so, it was almost 10 years ago, over a third of my life.

Whatever.

Anyway, my host mother took me to visit Paris.  We stayed in an apartment owned by a friend of hers and visited as much as we could without spending any money beyond necessary sustenance.  One of the best moments was sitting at the edge of Montmartre, crusty baguette in hand, sopping up the tomato and cucumber juice from a salad not unlike this one.  The sun shone over the rooftops, birds sang, and the city hummed with clear joie de vivre.

This summer salad always takes me back.  Luscious tomato.  Cool cucumber.  Earthy oregano.  Tangy yet sweet balsamic vinegar.  Fruity olive oil.  Tell me that you could frown while eating this.

Also, it is Lazy Chef approved.

Ingredients:

4 ripe tomatoes
1 cucumber
1/8 red onion
2 tsp balsamic vinegar
1 T olive oil
generous pinch of oregano


  1. Check cucumber skin for bitterness.  If necessary, peel cucumber.  Avoid if possible for true Lazy Chef experience.  
  2. Chop vegetables into bite-sized pieces.
  3. Pour vinegar and oil over veggies, sprinkle with oregano. Stir to combine.
