I love pairing a word like "cruciferous" with a word like "veggies."
Anyway....
I saw this easy-peasy chicken and okra dish on $5 Dinners and new I would toss it in my crockpot. The artist behind the original dish browned her meat and used a dutch oven, but I just can't be bothered with any of that nonsense.
As for the veggies, we live and die by roasting. I hadn't yet given Tom any roasted broccoli, but he declared he liked it even more than the cauliflower. That's saying something.
Anyway, without further ado....
Crockpot smothered chicken with okra:
Ingredients:
1 bag seasoning mix or mixed peppers and onions
1 bag chopped okra
2 large chicken breasts
1 can rotel
dash of Chacheres
large squirt of sriracha
Layer in a crockpot like so: chicken, veggies, rotel, seasoning. Set on low and cook 6-8 hours, depending on whether or not your chicken was defrosted. Come back, shred chicken, eat!
Veggies:
1 crown broccoli
1 head cauliflower
1 glug oil
2 generous shake of Chacheres
Chop Chop. Shake shake. Glug.
I think that's clear enough.
Mix around, spread on a baking sheet and roast at 400 for 20 minutes.
For the cost and calorie run downs:
chicken cost: chicken: 2, okra: .99, seasoning mix (onions and peppers).88, rotel: 1.19, chacheres: .1, sriracha .1=5.26 or .66 a serving. duuuude.
veggies cost: .88 for cauliflower and .50 for broccoli + .10 for oil and .05 for chacheres: 1.53 or .77 per serving.
Cost per person per meal: 1.46.
Calories per person per meal: 216 for chicken, 132 for veggies. Total of 248.
