I am torn. Do I give you an AMAZING recipe you should make RIGHT NOW even though there is no picture?
Of course I should, because the photos really aren't the strong suit of my blog. Besides, this is stupid simple, delicious and fast. With a crockpot, prep time was literally under 5 minutes. The outcome was delicious in a way that stunned me. It tasted VERY much like my favorite laksa at the Uptown-fabulous TomTom's Asian grill. Next time I will add some fish sauce, ginger and lemongrass just to see if I can make it wow-worthy, and I'll take a picture before I scarf it down.
Here it is:
2 chicken breasts
1 c coconut milk
2 small mangoes, cubed
1 T curry powder
1 tsp cardamom
1 T honey
1/4 c heavy cream
Dump first five ingredients in a crockpot, set to low and walk away. After 6 hours, the chicken should be shreddable. Stir in honey, then stir in cream. Serve. Eat. Revel.

Chicken (1 lb) 1.97
coco milk: .25
mangoes: .50
spices: .25
honey: .10
cream: .25
total: 3.32 for the dish, which should last you three meals
